With the cold weather not set to leave us any time soon... unless you're one of the lucky ones in the southern hemisphere, we figured it was time to share a few of our favourite soup recipes, starting with our favourite and very simple Onion Soup.
We call it our Lob It In A Pot Onion Soup because there really is no exact science how to make it, and quite honestly, who doesn't love an easy "lob it" recipe during the winter? P.s. Lob It In A Pot Onion Soup
- x1 cup of dry white wine
- x1/2 cup of butter (you can substitute this with an oil or butter replacement fo your choice if you don’t like/have butter)
- A dash of cognac
- 1 Litre of stock (we use vegetable or chicken stock… a beef stock would make the soup richer)
- Olive Oil
- A pinch of sugar (to help caramelise)
- Onions (we used 8 onions of varying size and taste)
- Grated Cheese (We like to use Gruyere,)
- Finely chop the onions and In a deep pot gently bring the butter to boil. Add the onions to the butter and sprinkle a little sugar over the top.
- Keep an eye on the onions and cook until they are lightly caramelised, be sure not to let them burn to the bottom of the pot. (If you would like the soup to be richer, you can cook them until they are a deep golden colour)
- Once the onions are caramelised add in the garlic (either crushed or thinly chopped) and then follow with the stock, wine and cognac. If there is not enough liquid then add a little more water. (if you need to add a lot more water then make more stock and top up the wine inclusion as well)
- Bring to the boil and add the salt and pepper then reduce to simmer and put the lid on the pot. Leave to simmer for between 2-4 hours (the longer the better) stirring occasionally and adding any extra herbs or salt and pepper you think is needed.
- Once fully cooked place into a bowl and grate the cheese on top (you can also add a lightly toasted slice of bread or homemade croutons if you wish) and enjoy!
Notes - When we have some left over champagne we like to add this too in place of, or with the wine. If you want to use one type of onion rather than a variety that's fine too, and using just red onions will give the soup an even richer and sweeter flavour.
